Let's Get Pickled **Hiccup**...

Not that kind of pickled!

I'm talkin' Refrigerator Sweet Pickles.

Since I've got cucumbers up the wazoo from my veggie garden, I thought why not makes some pickles!

First, gather up your ingredients.

6 - Cucumbers (sliced)
2 C - Sliced onions
1 C - Sliced green peppers

4 C -Sugar
2½ Tbs - Cannin' Salt
2 C - White Vinegar
3 tsp - Celery seed
A large cannin' jar or a big ol' jug with a lid.

Mix cukes, onion and peppers together.

Mix sugar, salt, vinegar and celery seed in the cannin' jar or jug. Mix it up real good too.

Then add your cukes, onions and peppers, stirrin' as you add them.

Place them in the refrigerator for 5 days makin' sure you mix them daily then enjoy!

You can put some in pint size jars and freeze 'em too. But heck, they won't last that long!

I love a good pickle! I don't suppose anyone's got a good mustard pickle recipe. They don't really "do" proper pickles over here.

Hey Ali, mustard pickles? Never tried 'em but I bet they are mighty tasty! I'll dig around my recipe books and see if I can find one for ya. :> )
Gina, I use a big ol' wooden spoon to mix them. But in a pinch you could stick you hand in there! ;> )
These are deliciously sweet and best of all... super easy!

Hi Peanut,

Your recipe sounds yummy and super easy ..and the photos .. are very appetizing !..

I have been making sliced cucumbers in vinegar with my homegrown cucumbers.. 1 cup vinegar, 1/2 cup sugar, 1/4 - 1/2 teas. salt, a couple dashes of pepper ..I bring that to a boil in a small stainless steel saucepan and put in 4 ice cubes in the mixture to cool it off and pour over 3-4 sliced and peeled cucumbers that are in a glass bowl. You have to use a glass bowl because of the vinegar. Cool longer if you want in the frig for 1-2 hours and serve up with dinner !

Hugs,
Linda
